摘要
采用国标所规定的方法,对虹鳟鱼肌肉的营养成分进行了测定,其粗蛋白为20.5%,粗脂肪为3.34%,水分为73.6%;用氨基酸自动分析仪测定了18种氨基酸含量,并与青鱼、草鱼、兴国红鲤、鲢鱼、鳙鱼的营养物质含量进行对比分析,结果表明:虹鳟鱼的蛋白质含量。
The major nutritive compositions in the muscle of Rainbow trout havebeen analysed.The results are as follows:In Rainbow trout'S muscle,there are is Zu.JXcrude protein,3.34% lipid and 73. 6% moisture.Rainbow trout,s fresh muscle contains 17.72 % amino acids,which consists of 18kinds of amino acids.Compared with Black carp,Grasscarp,Bighead,Singuo red carp and Silver carp,the quantity of the nutritive composition ofRainbow trout is the highest.This showed that rainnbow trout is an ideal delicious ediblecultural variety.
