摘要
新鲜蔬菜和水果携带病源微生物 ,生食新鲜水果和蔬菜引发疾病流行。电离辐射能使水果和蔬菜上的病源微生物全部失去活性 ,电离辐射技术用于水果和蔬菜的杀菌 。
Raw vegetables and fruits carry pathogens. Ingestion of raw vegetables and fruits can cause outbreaks of illness. Ionizing radiation of fruits and vegetables can deactivate pathogens. The usage of ionizing radiation in sterilization of fruits and vegetables is a promising technology that can be used to improve the safety of ready-to-eat fruit and vegetable.
