摘要
用 AACC法、液相色谱法及 Chopin法分别对相同小麦粉样的破损淀粉含量进行测定，并对其相关性进行比较。研究表明，三种测定方法具有极显著的相关性，复相关系数均达到或超过 0.8。
Analysis the damaged－ starch content in the same wheat flour sample by AACC,HPLC and Chopin methods respectively and then study the correlation between them,the result shows that the three methods are positively correlated(r>=0.8).
