Cloning and Expression Methods of α-acetolactate Decarboxylase Gene and Detection Strategy

摘要 双乙酰是啤酒生产工艺中重要的风味物质,为控制啤酒生产中双乙酰的含量,缩短啤酒熟化时间,基因工程技术改造啤酒酵母已应用得非常广泛。综述国内外基因工程技术克隆表达方法,介绍检测策略。 Diacetyl is the important flavour in beer processing technique. In order to lower diacetyl concentration in beer production, shorten fermentation time of beer, gene modified technology is commonly used to introduceα-acetolactate decarboxylase gene into beer yeast strain. The different cloned methods and express methods were reviewed. The detection strategy was formed.
