摘要
花青素是高等植物中重要的水溶性多酚类化合物,其种类繁多并拥有多种功效,具有十分重要的开发价值和广阔的应用前景,目前已受到国内外的广泛关注。该文根据近年来国内外花青素的研究,对其分离纯化的方法进行综述。
Anthocyanins are important water-soluble polyphenolic compounds in higher plants. There are many kinds and have a variety of functions, so they have great development value and broad application prospects. At present, anthocyanins have received widespread attention at home and abroad. Reviewe the research progresses on means of separation and purifica- tion of anthocyanins.
