摘要
对Cd、Cu、Pb在大豆籽实各形态结构的分析表明,它们绝大部分分布于子叶中 ,种皮中也占据一定比例;Cd、Cu、Pb在大豆营养成分中的分布以与蛋白质结合比例为高 ,脂肪中甚少;Cd、Cu、Pb在不同类型蛋白质中以与球蛋白、清蛋白结合比例为高;大豆加工成豆腐、豆浆、豆芽后,Cd、Cu、Pb的含量较大豆明显降低。
It has been found that the major heavy metal pollutants such as Cd, Cu and Pb are distributed in cotyledon and minor in seed capsule by an analysis. The concentrations of Cd, Cu and Pb are in the highest in protein and lowest in soybean oil in various nourish components of soybean. In terms of both globulin and albumin, the concentration of Cd, Cu and Pb are in the highest in many types of protein. In contrast, the contents of Cd, Cu, and Pb, respectively, in bean curd, soybean milk and bean sprout derived from soybean are abased distinctly.
