红曲紫薯酒抗氧化性的研究 被引量:1

Processing Technology of Red Starter Purple Sweet Potato Wine

摘要 红曲紫薯酒以紫薯作为原料,结合福建闽派黄酒的酿造工艺,采用红曲酿造,具有良好保健价值。通过对总酚含量、花色苷色价、总抗氧化性和清除DPPH自由基能力的测定,将红曲紫薯酒与普通黄酒和干红葡萄酒进行对比,结果表明红曲紫薯酒比普通黄酒和干红葡萄酒具有更强的抗氧化能力。 Using the purple sweet potato as raw material, combined with Fujian traditional yellow rice wine brewing technology, the red starter purple sweet potato wine has good health value with starter for fermentation. The total phenol content, anthocyanin color scale, total antioxidant ability, ability of removing DPPH· are analyzed to compare with the ordinary yellow rice wine and dry red wine. The results show that the red starter purple sweet potato wine has greater antioxidant functions than ordinary yellow rice wine and dry red wine.
