摘要
荞麦在我国的种植历史悠久,近几些年来,随着科学技术的发展和提高,荞麦及其加工产品的营养、保健作用逐渐被重视,各类荞麦制品相继涌入市场。然而,目前对于荞麦及其加工产品的研究、开发利用,仍有许多问题亟待解决。通过对荞麦的营养成分、加工利用价值等进行综述并对荞麦的进一步开发研究提出一些建议。
Buckwheat has a long planting history in our country. In recent years, with the development of science and technology, much more attentions have been paid on the nutritional value and health effects of buckwheat, hence, series of buckwheat products flowed into the mar- ket. However, after literature mining, we found that there are still many obstacles in the process of research and utilization of buckwheat. The nutrition and healthy function of buckwheat were summarized, thus put forward some advice for further research and development of buckwheat.
