摘要 天然色素是指从动物和植物组织及微生物(培养)中提取的色素,具有色泽自然鲜艳,营养价值高,无毒无害、安全性高的特点。利用微生物生产天然色素可以解决天然色素原料稀少、成本高昂等诸多问题,更有利于工业化生产。本文介绍的微生物色素,有红曲色素、栀子色素、类胡萝卜素、黑色素、靛蓝等,对其特性、菌种选育、提取方法等进行了综述,并对各种微生物色素如何进行工业化生产提出了建议。 Natural pigment is extracted from the animals and plants organization and microorganism cultivation. It has many characteristics such as natural bright colour and luster, high nutritional value, avirulent, harmless and high safety. It is a good method that natural pigment was produced by microorganism to solve the problems of raw material scarce and high costs. By the way , this way also could increase yield of natural pigment. In this paper, the microorganism pigment, monascus pigment, gardenia pigment, carotenoids, melanin, indigo were introduced and summarized. Characteristics of microorganism pigment were reviewed including breeding strains , extraction method, and recommendations on a variety of the microbial pigment in the industrial production.
