甜菜碱对肥育猪胴体组成及肉质的影响 被引量:24

Effects of betaine on carcass composition and meat quality in finishing pig

摘要 取体重 6 0kg左右健康的“杜长宁”三元杂交肥育猪 80头 ,按饲养试验要求分成 2组 ,分别饲喂含 0g kg和1g kg盐酸甜菜碱的玉米 豆粕型日粮 40d .结果表明 ,甜菜碱能明显改变胴体组成和肉质品质 ,与未添加组相比 ,胴体瘦肉率提高 8.92 % (P <0 .0 1) ,眼肌面积增大 10 .85 % (P <0 .0 1) ,脂肪率、板油重和平均背膘厚度分别下降16 .6 2 % (P <0 .0 1) ,16 .0 6 % (P <0 .0 1)和 16 .19% (P <0 .0 5 ) ;肌肉颜色和大理石纹评分分别提高 8.2 4% (P <0 .0 5 )和 11.39% (P <0 .0 5 ) ;肌肉中粗脂肪、肌红蛋白、肌酸和肌酐酸含量分别提高 17.0 5 % (P <0 .0 5 ) ,15 .10 % (P <0 .0 5 ) ,16 .80 % (P <0 .0 5 )和 2 1.33% (P <0 .0 1) . finishing pigs (Duroc×Landrace×Ning) of about 60?kg body weight were allotted to 2 groups to be fed with a basal corn soybean meal diet and 0?g/kg, 1?g/kg betaine for a period of 40 days, respectively. The results indicated that betaine supplementation significantly changed carcass composition and meat quality. Adding betaine significantly increased rate of carcass lean and longissimus muscle area by 8.92%( P <0.01) and 10.85% ( P <0.01), and decreased rate of fat, leaf fat weight and mean back fat by 16.62%( P <0.01), 16.06%( P <0.01) and 16.19%( P <0.05) as compared with control, respectively. Muscle grades of color and marbleization were increased by 8.24%( P <0.05) and 11.39%( P <0.05), respectively. The concentrations of crude fat, myoglobin, creatine and creatinine were improved by 17.05% ( P <0.05), 15.10%( P <0.05), 16.80%( P <0.05) and 21.33%( P <0.01).
