摘要
通过对大麦虫各种虫态的一般营养成分以及氨基酸、矿物质和微量元素进行分析。结果表明,各种虫态水分含量在58.67 g/100 g^62.05g/100 g;干物质中粗脂肪含量为23.81 g/100 g^36.36 g/100 g,粗蛋白含量在45.21 g/100 g^54.97g/100 g;除色氨酸未测外,含有17种氨基酸,其必需氨基酸含量占氨基酸总量的39.63%~45.99%,必需氨基酸含量均高于牛肉和伊利全脂奶粉,略低于鸡蛋。按照氨基酸评分(AAS)和化学评分(CS)标准,第一限制氨基酸为含硫氨基酸,必需氨基酸指数在92.84~110.84之间,大麦虫蛹粉的氨基酸组成要比幼虫粉和成虫粉的氨基酸组成更为合理;其矿物质及微量元素含量丰富,磷、锌、铁含量高于一般动物性食物。
The contents of general nutrients, amino acids, mineral and trace elements in different instars of Superworm were analyzed. The data indicated that there was a moisture content range of 58.67 g/100 g-62.05 g/ 100 g; and there was a fatty content range of 23.81 g/100 g-36.36 g/100 g, a protein content range of 45.21 g/ 100 g-54.97 g/100 g in dry sample; they all comprised 17 kinds of amino acids (tryptophon not measured), in which there was a EAA range of 39.63 %-45.99 % in total amino acid, the contents of EAA arc all higher than beef and Erie whole milk, slightly lower than the eggs, according to the amino acid score (AAS) and chemical score(CS), the first limiting amino acid in different instars of Superworm was Met and Cys, besides, the essential amino acid index (EAAI) ranges between 92.84 and 110.84, the amino acid composition of pupa powder is more reasonable than that of larva and imago powder; the contents of P, Zn and Fe was higher than those in general animal food, too.
