摘要
目的为掌握北京市集体食堂食物中毒事故发生的规律和特点,有效预防、及时控制和消除集体食堂食物中毒事故的发生,制定科学有效的预防措施,保障公众的身体健康。方法对2008~2012年北京市卫生监督所接到的67起发生在集体食堂食物中毒事故进行整理分析。结果2008~2012年,北京市集体食堂共发生食物中毒事故67起、发病人数1181人、无死亡病例。集体食堂食物中毒事故主要发生在第二和第三季度,发病高峰季度为第三季度。造成集体食堂食物中毒事故发生起数和发病人数最多的致病因素为动植物性食物中毒。企业事业单位集体食堂发生的食物中毒事故起数和发病人数最多。结论加强集体食堂的监管和从业人员食品安全知识培训;督促集体食堂餐饮服务提供者当好预防食物中毒事故第一责任人;加强对公众食品安全及预防食物中毒知识的宣传教育等措施,最大限度减少集体食堂食物中毒事故的发生。
Objective: Find the rules and characteristics of Beijing canteens food poisoning accidents; effectively prevent, timely control and eliminate collective canteens food poisoning incidents; develop scientific and effective preventive measures to protect public health.Method: Analyze the 67 canteens food poisoning accidents received by Beijing Municipal Health Authority during 2008 to 2012.Resuhs:During 2008 to 2012, there were 67 food poisoning occurred in Beijing canteens. The number of incidence was 1181. No deaths. Can- teens food poisoning occured mainly in the second and third quarters, and the peak quarter was the third one. The main reason of the largest number of food poisoning incidents and morbidity risk factors was plant and animal food poisoning. Enterprises and institutions canteens food poisoning occurred the most in the number of accidents and the incidence.Conclusion:Strengthen supervision of the canteens management and the food safety training to practitioners; urge collective canteens catering service provider to be the first responsible party of food poisoning; enhance public knowledge of food safety and propagate the knowledge of preventing food poisoning to minimize canteens food poisoning incidents.
