摘要
本文对海东鸡和卡力岗鸡鸡肉肉质品质成份进行了检测,并对检测数据进行了单因素方差分析。结果表明:海东鸡鸡肉肉质主要营养成份,蛋白质、铁、棕榈酸、亚油酸和一些主要氨基酸如天冬氨酸、苏氨酸、丝氨酸、缬氨酸、异氨酸、异亮氨酸、酪氨酸和苯丙氨酸等均高于卡力岗鸡鸡肉主要营养成份的含量。
The meat quality ingredients of Haidong chicken and Kaligang chicken were tested in this paper, and data was analyzed as the single factor analysis of variance. The results showed that protein, iron, palmitic acid, linoleic acid and some main amino acids such as aspartic acid, threonine, serine, valine, glycine, isoleucine, phenylalanine and tyrosine in meat of Haidong chicken were higher than in meat of Kaligang chicken.
