摘要
采用1.0%CaNO3处理豇豆(Vigna unguiculata(Linn.))荚0、10、20、30min后,通过测定豇豆荚的电导率、失重率、色泽、PAL活性、叶绿素含量、木质素含量,探讨了钙处理对豇豆荚贮藏质地的影响。结果表明:钙处理能有效地抑制豇豆荚相对电导率和失重率的上升,同时还明显地减缓了其叶绿素含量的下降,降低了PAL酶的活性,减少了木质素含量,改善了豇豆荚的质地,延长了豇豆荚的贮藏时间。其中以CaNO3处理20min效果最好,其次为CaNO3处理30min,处理10min效果不理想。
Cowpea pod(Vigna unguiculata(Linn.))were dipped into 1.0% calcium nitrate solution at 0,10,20,30min and the electrolyte leakage,weight loss,color,PAL activity,content of chlorophyll,lignin content of cowpea pod were investigated to explore the effects of calcium nitrate on storage texture of postharvest cowpea pod.The results indicated that calcium nitrate could obviously restrain the increase of electrolyte leakage and weight loss,and it could significantly inhibit decrease in the chlorophyll content,activity of PAL and lignin content.Simultaneously,cowpeas pod kept desirable flavor color and texture resulting from calcium nitrate.The best effects were calcium treated at 20min,30min was following and 10min had not significant effects.
