摘要
从市售红曲米中分离得到1株高产红曲色素的红曲霉菌株M02,利用单因素实验和正交实验确定了M02菌株的最适发酵培养基。结果表明,最适发酵培养基的组成为大米粉5%,硝酸钠0.3%,KH2PO40.105%,K2HPO40.045%,MgSO40.2%。在此培养基条件下,调整初始pH为5.0,发酵温度为30℃,转速为180r/min摇床发酵,发酵5天后色价达到72.8U/mL。
A Monascus strain M02 with high productive Monascus pigment is isolated from marketing red-yeast-rice. According to single factor experiment and orthogonal experiment, the optimum composition of fermentation medium is showed as followsrice flour of 5%, NaNO3 of 0. 3%, KH2PO4 of 0. 1050%, K2 HPO4 of 0. 045 and MgSO4 of 0.2%. Under these conditions, the total pigment value reaches 72. 8 U/mL when initial pH is 5.0, fermentation temperature is 30 ℃, rotate speed is 180 r/min and incubated for 5 days.
