摘要
目的:通过玉米饲料喂养低营养动物模型及建立的食品BDI-GS(Benefit-damage Index & General score)新评价体系,对市售2种糯米营养及健康效应进行对比评价,用损益指数(BDI)及其累计积分(GS)考察糯米对脏器组织及机体整体功能的影响。方法:分别设有空白对照组,8.0%长粒糯米及8.0%圆粒糯米组,以线性生长期健康的ICR小鼠为研究对象,饲养12d后解剖完整取出心、肺、胸腺、脾、胰、肝、肾、性腺精囊及股骨等脏器组织,称取质量,并进行血清生化指标的检测。结果:圆粒糯米的GSW值较长粒糯米高,表明其营养效价较高,长粒糯米营养功效稍差;但二者累计GSI综合评价指标相仿。结论:圆粒糯米和长粒糯米的营养效应差异明显,但2种糯米综合健康效应相当。
Objective: Through low-nutritional animal model fed with maize diet and the established BDI- GS (Benefit-damage Index & General score) novel evaluation system of food the nutritional and healthy effects of both round grain and long grain glutinous rice on sale were evaluated comparatively, observe the influences of both glutinous rice for functions of vital organs and whole body by using benefit- damage index (BDI) and accumulative general scores (GS). Method: The healthy ICR male mice during the linear growth were selected as subject. Maize fed mice as control, 8.0% long-grain glutinous rice and 8.0% round-grain glutinous rice fed mice were designed in the study, respectively. After fed twelve days, recorded mice body weights, perfectly took heart, lung, thymus, spleen, pancreas, liver, kidneys, spermary and femur, record weights, indices and BDI values, accumulative; GS and further analyses serum biochemical parameters. Results: nutritional effects of both kinds of glutinous rice are of obvious differences, comprehensive GSW value for round-grain glutinous rice is higher than that of long-grain one. Conclusions: It shows that round-grain glutinous rice is of higher nutritional functions, but long-grain one is of relative lower nutritional effects. Whereas, accumulative GSI values of both glutinous rice are similar, and this shows that both glutinous rice are of gross equivalent healthy functions.
