摘要
挤压膨化技术作为现代食品工程高新技术之一 ,已广泛应用于食品工业中 ,并逐步在饲料、油脂、酿造、组织化植物蛋白等多个加工领域中得到应用。本文主要介绍了挤压膨化技术的特点、机理、加工设备、工艺流程以及该技术的应用概况 ;分析了挤压膨化技术的现状和发展趋势 ;指出挤压膨化加工技术具有广阔的发展前景。
As one of the high new technologies of modern food engineering, extrusion technology has been widely used in food industry. It is also in the processing of feed, oil extraction, brewing, textured vegetable protein etc., The feature, equipments, mechanism, processing line and applications of extrusion technology are introduced mainly in this paper. The present situation and developing tendency of extrusion technology are analyzed. It also indicates that extrusion technology has broad developing prospects.
