摘要
本文用氨基酸自动分析仪测定了苦荞麦粉中 18种氨基酸 ,其总含量为 11.74g/10 0 g,其中有营养必需的 8种氨基酸。苏氨酸为第一限制氨基酸 ,含硫氨基酸为第二限制氨基酸 ,并考查了其应用前景。苦荞麦 ( Fagopyrum tataricum( L.) Gaertn)属蓼科 ( Polygonaceae) ,是一年生草本植物 ,其果实含有大量淀粉 ,可磨粉食用或作牲畜饲料。据文献记载 ,带果的全草入药 ,祛风湿、健胃 ,主治跌打损伤、腰腿酸痛、消化不良等症。它分布于我国西南大部分地区。为了进一步开发利用苦荞麦尤其是苦荞麦果实资源 ,使之成为天然保健食品 ,本文用氨基酸自动分析仪测定其氨基酸含量 ,并在这方面对其营养价值作一评价。
In this paper,the contents of 18 kinds of amino acids in the flour of Fagopyrum tataricum (L.)Gaertn.had determined using Automatic Amino Acid Analyzer Model 835~50,of which 8 kind are essential amino acid.The result revealed the total content of amino acids amounted to 11.74 g/ 100 g .The Threonine was the first limting amino acid and its AAS was 0.79.The sulfur containing amino acids were the second limiting amino acids.The ratios of E to E+N and E to N are 35.4% and 0.55,respectively,which approximated that of reference protein model proposed by WHO/FAO.These results showed a better prospect in exploiting and applying natural healthfood.
