摘要
探索数据挖掘技术在中式烹饪复合味型配方调配规律中的方法,以收集中式烹饪中典型的复合味型配方为挖掘对象。运用数据预处理,进行配方名称和用量计量的规范,采用聚类分析,对配方进行不同菜系、呈味物质类型进行分类、使用频率集统计构成复合味型配方的核心调味料,及其关联对应规则。研究结果表明,挖掘得出的相关知识模式对于实现自动烹饪机器人自动调味工艺具有一定的理论意义和实践价值。
This paper based on collecting Chinese cuisine in the typical compound flavor type formula for mining object, explores the method rule of the data mining technology compound flavor type formula deployment in the Chinese cuisine. Using the data preprocessing, recipe name and dosage of measurement standard, using the cluster analysis, the formula for different cuisines, the flavor types are classified. And using frequency set statistical constitute compound flavor type formula core seasonings, and its correlation corresponding rules. The results show that the obtained mining knowledge pattern for the realization of automatic cooking robot automatic seasoning process has certain theoretical significance and practical value.
