摘要
紫色甘薯色素是从紫色甘薯块根中浸提出来的一种天然食用花青素类色素。采用酸性溶剂法对紫色甘薯共14个品种(品系)的色素含量进行了检测和比较。结果表明:不同基因型紫色甘薯的色素含量差异较大,其中A1、A2、A5、A7及B1、B2、B3、B7、B8等品种(系)色素含量较高,是值得进一步选择和培育的群体。
Purple sweet potato colorant is a natural anthocyanin pigment derived from purple sweet potato stor- age roots. In the present study,the contents of anthocyanin pigments derived from 14 strains or cuhivars of pur- ple sweet potato storage roots were compared by acid solution. The results show that the contents of pigment were different among the different genotype of purple sweet potato,the contents of pigment derived from A1.A2. A5 .AT and B1,B2,B3,BT,B8 were higher,the above-mentioned purple sweet potato were worth to select and breed.
