摘要
职业教育必须以就业为导向,以能力为根本,培养社会需要的高技能人才。为了实现这一目的,必须努力提高职业教育的教学水平,尤其是技能教育的水平。从江苏省烹饪技能大赛可以窥探出江苏烹饪教育的现状,表明职业技能教育必须在课程改革中凸现技能教育,加强"双师型"师资队伍建设,重视实训基地的技能教学功用,强化技能的基础训练,狠抓技能的环节教学,在校企合作、社会实习中做足文章。
Vocational education must be employment-and-competence-oriented to meet the demand of the socie- ty. To achieve this goal, focus should be placed on teaching especially skill education. Culinary skill competi- tions of Jiangsu provide a glimpse into its cuisine education, and suggest that practical skills are the core of teaching reforms in vocational education.
