摘要
对纳米颗粒在食品领域中应用的安全性及其风险的研究进展进行综述,着重关注纳米颗粒的代谢、安全性及其在食品领域中应用的风险评估,以期为公众认识、食品安全监管和决策部门提供参考。
This paper overviews current researches on safety and risk of nanomatericals applied in food sector to cus-tomers, with emphasis on it's absorption, distribution, metabolism and excretion (ADME) . We hope this paper might provide some references for the public awareness, food safety regulation and decision - making departments as well.
