摘要
对豆角、生菜、甘蓝在振动条件下冷藏贮存的状态及品质变化进行试验研究,通过设定不同的冷藏环境温度、湿度和振动等试验条件进行蔬菜在振动条件下冷藏贮存的模拟对比试验。分析比对不同试验条件下蔬菜的色差、pH、叶绿素含量、固形物含量和含水量的变化情况,总结不同的冷藏环境温度、湿度和振动条件对蔬菜品质带来的影响,为优化果蔬冷藏运输条件提供参考。
Abstract Study on the status and quality change of beans, lettuce and cabbage which refrigerated storage in the vibration condition. The simulation comparative experiment of vegetables refrigerated storage in the vibration conditioned by setting the different experimental conditions including the refrigeration temperature, humidity and vibration. Analyze the changes of the chromatism of vegetables, the pH, the chlorophyll content, the solids content and the water content under different experimental conditions. It summarized the impact on the quality of vegetables in different refrigeration temperatures, humidity and vibration conditions provided the reference data to optimize the refrigerated conditions of fruits and vegetables transport.
