摘要
通过对泸型酒发酵过程中主要做生物在不同发酵条件下代谢规律的研究,分析了自然状态下,泥窖这一特殊发酵容器内微生物代谢的特性,从而揭示了泸型酒窖内微生物发酵特征,指出了不同状态下的配料调整和技术措施。
Through the study about metabolic law of major ndcroorganisms during the process of Luxinjiu fermentation under different conditions, the metabolic characteristic of microorganism is analysed under natural condition in special soil fermenting cellar and then, the adjusting materials and the technical measure at different situation are put forward.
