拮抗菌降解展青霉素及其机制研究进展 被引量:4

摘要 展青霉素是一种有毒的真菌次生代谢产物,广泛存在于水果及其制品中,是对人类危害最大的霉菌毒素之一。近年来,采用生物拮抗菌控制并降解水果及其制品中的展青霉素已成为国际学术界研究的热点。本文综述了近年来拮抗菌降解展青霉素的研究进展,分析了展青霉素的生物降解机制,并论述了拮抗菌对苹果及其制品上展青霉素的控制效果。 Patulin is a toxic fungal secondary metabolite,which is one of the mycotoxins that can cause serious health problem.Patulin has been identified in various fruits and fruit products throughout the world.Biological control is considered as the most promising measure to replace chemical fungicide in reducing post-harvest loss of fruit.In this paper,research progress in patulin degradation by antagonistic microorganism were reviewed,and the mechanisms of degradation were analyzed.Apple and apple product were taken as example to discuss the control effect of antagonistic yeast on patulin.
