摘要 砷是广泛存在于环境中的有毒重金属元素之一,易被动植物吸收并在体内累积。砷在动植物体内存在多种形态,不同形态砷之间的毒性差异很大,若仅进行砷总量的测定,不能正确反映其在食品中的安全性,目前食品中砷的形态越来越受到国际卫生机构的关注,砷形态分析也逐渐成为研究的热点。砷形态分析研究中,最常用的砷化物提取溶剂是强酸,效果较好的是甲醇的水溶液;最常用的分离检测方法是液相色谱结合氢化物发生-原子荧光法,分析结果最全面最可靠的是液相色谱串联原子质谱和有机质谱法。每一种方法都具有其独特的优势,当然也存在一定的局限性,所以在实际样品分析测定时需要具体问题具体对待。对食品砷形态分析中的前处理技术、检测技术等进行了综述,总结了目前砷形态分析中仍然存在的一些问题,并对此方面的研究作了一些展望。 Arsenic is one of the toxic heavy metal elements which is widely present in the environment, and it is susceptible to be absorbed by plants and animals, then to be accumulated. There is a variety of arsenic speciation in the body of plants and animals, and the toxicity among them is widely different. As the result of that, the determination of total arsenic can not correctly reflect the food security, the international health agencies giving an increasing concern on the forms of arsenic in the food, and the arsenic speciation analysis has become a hot research. Arsenic speciation analysis, the most commonly used arsenide extraction solvent is strong acid, but the more effective one is the aqueous solution of methanol, for separation and detection, the most commonly method is LC-HG-AFS, and the comprehensive and reliable one is LC-ICP-MS-ESI-MS. Each approach has its unique advantage, of course, there are some limitations, and so we should choose the specific one to determinate the actual sample. This is a review on the pre-treatment technology and detection technology of the arsenic speciation analysis of food, and give a summary about the problems which are still existing in arsenic speciation analysis, and show an outlook on this study.
