摘要
目的为餐饮服务环境中有害物质的检验检测工作提供参考。方法对目前餐饮服务环境中有害物质的检测技术和方法等进行综述,并就其存在的问题提出对策。结果与结论餐饮服务环境与食品安全息息相关,应加强对餐饮服务环境的监测和监管,积极开展餐饮服务环境中有害物质检测技术和相关标准的研究,切实保护公众饮食安全。
Objective To provide references for hazardous substance detection in catering environment.Methods The current analysis techniques and methods of hazardous substances in catering environment were reviewed,and some suggestions for the existing problems were put forward.Results and Conclusion Catering environment is closely related to food safety,so it is an urgent to enhance the supervision of catering environment,as well as the development of related techniques and methods for hazardous substance detection to effectively guarantee public catering safety.
