摘要
目的了解大学生早餐摄入情况及早餐质量,为进一步地开展大学生营养健康教育和干预提供科学依据。方法采用回顾性问卷调查法,对随机抽取的河北大学在校大学生500人进行过去1周的早餐摄入情况调查。结果大学生中有52.5%的人1周内每天吃早餐,且女生(60.1%)就餐率明显高于男生(40.2%);不吃早餐的学生中有80.5%是进入大学后才养成的习惯。早餐中摄食频率较高的是谷物类、奶制品、蛋类,分别占71.6%、51.2%、50.2%。有57.9%的大学生早餐营养质量"较差"。选择早餐食物仅有11.4%的学生考虑营养和卫生,50.1%的学生多依据个人口味和爱好;50%的大学生早餐消费水平为2~4元;大学生中认为早餐与健康密切相关的占60.8%,其中医学生、文科学生、理科学生分别占68.0%、54.7%、41.7%。结论大学生早餐就餐率不高,早餐营养质量较差,对营养早餐与健康的认知存在专业差别,应多渠道加强相关的营养健康教育,提高大学生对早餐的重视程度,从而建立良好的饮食行为。
Objective To understand the breakfast status of students and the quality of breakfast to further develop their nutrition health education and provide scientific evidences for intervention.Methods 500 college students randomly selected from the Hebei University were conducted with retrospective investigation on the breakfast status in the last 1 week.Results 52.5% college students had breakfast every day,and the female students(60.1%) were significantly higher than than of males(40.2%);80.5%student developed the habit after coming college.The higher frequency of breakfast feeding were cereals,dairy products,eggs,accounting for 71.6%,51.2% and 50.2%.57.9% students' breakfast quality was poor.Only 11.4% students chose food considered nutrition and safety of the food,50.1% students chose food,based on their own taste and favor.50% students in breakfast consumption level were between 2 and 4 yuan.60.8% students considered that breakfast and health were related closely,off them,students whose major are in medicine,art and science accounted for 68.0%,54.7% and 41.7% respectively.Conclusion The ratio of having breakfast in college students is fewer,and quality of breakfast is poorer,students of different majors have differences on the recognition of breakfast and health,it is necessary to strengthen nutrition education through multiple channels to enhance their attention on their healthy status.
