香蕉皮中水不溶性膳食纤维提取工艺研究 被引量:4

摘要 以香蕉皮为原料,利用化学方法提取香蕉皮中水不溶性膳食纤维。通过对试剂浓度、料液比、温度、时间等影响因素的研究找到最佳提取条件。正交试验及验证试验结果表明水不溶性膳食纤维的最佳工艺条件为氢氧化钠质量分数为5%、料液质量比为1∶5、提取温度为75℃、提取时间为50 min,香蕉皮中水不溶性膳食纤维得率为55.71%。产品呈淡色,无异味,颗粒细小。 Extraction of soluble dietary fiber from banana peel by chemical method was studied in this paper. Experiments were carried out to determine the best extraction condition by the research of material-liquid ratio,acid concentration, extraction temperature and time. The results indicated that the optimal extraction condition was to extract at 75 ℃, extract time was 50 min, the material-liquid ratio was 1 : 5, the sodium hydroxide concentration was 5%. The extraction rate under this condition was 55.71%. The product is of fine particle size,has no strange odors,and in light color.
