摘要
概述了品种、栽培条件和采收时期、温度和相对湿度、不同贮藏保鲜技术对辣椒耐贮性的影响,并从辣椒采后生理生化变化方面,包括果实硬度、呼吸作用、乙烯释放、营养成分、相关酶类等,阐述了国内外辣椒耐贮性的研究进展,进而对未来辣椒耐贮运研究的重点和热点进行了展望。
The impacts of varieties, culture conditions, harvest time, temperature, relative humidy and different storage techniques on storage quality of pepper fruit were reviewed at first. Then the advances in storage quality of pepper fruit in China and abroad were introduced in terms of post-harvest physiological and biochemical changes, such as fruit firmness, respiration, ethylene release, nutrients and relevant enzymes etc.. In the end, the hotspots and focuses of the research in storage quality of pepper fruit were prospected.
