摘要
介绍了近些年来国内外有关化学保鲜剂在果蔬贮藏保鲜中的研究及应用现状,包括果蔬化学涂膜剂、植物生长物质、食品添加剂、天然植物提取物等。展望了化学保鲜剂保鲜机制研究对其应用的重要作用。
The application of chemical preservative in storage and fresh-keeping of fruit and vegetable at home and abroad were introduced, including chemical coating materials, plant growth substances, food additives, natural extractive of plant, and so on. At the same time, this article also had taking a fresh look at mechanism study of chemical preservative playing an important role on their application.
