摘要
中国黄酒历史悠久 ,酿造技艺富含高深的科学原理和技巧 ,是祖国的宝贵财产。建国50年来 ,黄酒业技术创新主要表现在 :①酿酒设备的机械化更新 ;②包装自动化 ,产品瓶装化 ;③酿酒新原料的应用 ;④酒曲的优化、纯化及制曲机械化 ;⑤黄酒新酶制剂的开发及其应用 ;⑥加强黄酒科学研究和技术创新等阶段。
For the long history of yellow rice wine in China, its fermention technologies consist of abundant profound scientific theories and skills and are precious treasures.
