摘要
以四川泡菜为分离源,分离筛选用于泡菜直投式发酵的益生功能菌种,获得7株具产酸、降解亚硝酸盐、能在模拟胃肠道环境下生存等综合指标较优的菌株,菌株原始编号分别为11#,17#,30#,44#,53#,76#,99#。
7 probiotic strains were isolated from Sichuan pickles which have ability of producing high level organic acid and survival in the models of stomach and small intrstine. The strains of the original number are 11#, 17#, 30#, 44#, 53#, 76#, 99, and they will be applied for Direct Vat Set Pickles fermentation.
