放养柴鸡与笼养鸡部分屠体指标和肌肉品质比较研究 被引量:15

摘要 为研究放养柴鸡在屠宰性能和肌肉品质上的特点,随机抽取150日龄放养的河北柴鸡与现代笼养鸡(京白)各8只进行屠宰试验,分别测定屠体指标、肌肉常规营养物质、氨基酸和肌苷酸含量。结果表明,放养柴鸡嗉囊质量和小肠质量分别比笼养鸡高53.77%和57.58%(P<0.01),柴鸡的直肠-结肠长度为10.33cm,较笼养鸡提高了31.59%(P<0.05)。柴鸡胸肌和腿肌中粗蛋白质含量较高,分别为25.76%和23.47%,显著高于笼养鸡,而肌间脂肪含量极显著低于笼养鸡(P<0.01);柴鸡胸肌和腿肌的谷氨酸和肌苷酸含量均高于笼养鸡。综上所述,放养柴鸡在部分屠体指标,特别是与消化功能相关的肠道发育上较笼养鸡更具优势,其肌肉品质和影响肉品风味的物质含量也要高于笼养鸡。 To observe the trait of muscle quality of domestic chicks,each of eight 150-day-old chicks were selected to slaughter and determine the slaughter indices,the content of muscle nu-trients,amino acid and IMP.The results showed that the domestic chicks had advanced crops and small intestine,53.77% and 57.58% higher than that of caged chicks,respectively.The lengths of straight-colon of domestic chicks were 10.33 cm and 31.59% higher than that of caged chicks.The crude protein contents of breast and leg muscle of domestic chick were 25.76% and 23.47%,which are significantly higher than that of caged chicks.The fat content of muscle significantly lower than that of caged chicks(P0.01).The content of aminoglutaric acid and inosine monophosphate in breast and leg muscle of domestic chicks were higher than that of caged chicks.The data indicated that the domestic chicks have more superiority in part of slaughter indices,especially in development of intestinal canal related digestive function,besides in muscle quality and the content of flavored matter than those of caged chicks.
