摘要
以常规储藏作对照,研究了充氮气调不同温度条件下花生仁储藏品质随时间的变化情况.试验表明:充氮气调组的花生仁储藏品质劣变速率较对照组缓慢,充氮98%的储藏效果优于充氮90%,尤其对花生仁发芽率、过氧化氢酶活动度的降低及脂肪酸值的升高起到明显的延缓作用.在35℃条件下,经过180 d储藏后花生仁发芽率:充氮98%组从99%下降到59%,充氮90%组下降到53%,而常规组下降到了50%;过氧化氢酶活性值下降量分别为:充氮98%组12.33 mg/g,充氮90%组14.09 mg/g,常规组22.72 mg/g.
Taking conventional storage as contrast, the change of the storage quality of peanuts with time under controlled atmosphere storage with N2 at different temperatures was studied. The test showed that the deterioration rate of the storage quality of peanuts under the controlled atmosphere storage with N2 was smaller than that of the contrast group; the storage effect under the controlled atmosphere storage with 98% N2 was superior to that of the controlled atmosphere storage with 90% N2; particularly, the 98% N2 had a significant effect in suppressing the germination rate of peanuts, the decrease of catalase activity and the increase of fatty acid value. At 35℃, the germination rates of the peanuts of the 98% N2 group, the 90% N2 group and the conventional group after stored for 180 days were reduced from 99% to 59%, 53% and 50%, respectively; and the catalase activities of the 98% N2 group, the 90% N2 group and the conventional group were reduced by 12.33 mg/g, 14.09 mg/g and 22.72 mg/g, respectively.
