摘要
将糯质淀粉在3 000 r/min的条件下离心10 min,采用显微镜、激光粒度分析仪、X射线衍射仪等,分析分离得到的不同粒径的淀粉颗粒的粒径特点及其内在结构.研究表明,在本试验选定的分离条件下,糯质小麦淀粉的分离效果最好,其次是糯玉米淀粉,糯米淀粉基本未达到分离目的.激光粒度分析仪测定糯质小麦淀粉大、中、小颗粒平均粒径分别为20.1μm、6.5μm和4.2μm,糯玉米淀粉大、小颗粒平均粒径分别为15.0μm和4.0μm,糯米淀粉的平均粒径为6.0μm.综合分析显微图和激光粒度图后,发现X衍射图能在一定程度上反映粒径的分离效果,并且在测定条件严格一致的情况下,大粒径淀粉表现出比小粒径淀粉更高的衍射强度.
In this paper, we studied the particle size characteristics and the internal structure of starch parncles with different particle sizes by using microscope, laser particle size analyzer, X-ray diffractometer and the like after centrifuging the waxy starch at 3 000 r/min for 10 minutes. The results showed that the waxy wheat starch had the better separation effect than the waxy corn starch under the selected separation conditions, and the waxy rice starch was not separated substantially. The average particle sizes of large, intermediate and small waxy wheat starch particles were respectively 20.1 μm, 6.5μm and 4.2 μm; the average particle sizes of large and small waxy corn starch particles were respectively 15.0 μm and 4.0 μm; and the average particle size of waxy rice starch was 6.0μm. The comprehensive analysis of microscopic images and laser particle size images showed that the X-ray diffraction images could reflect the separation effect to some extent, and the large-particle-size starch showed higher diffraction strength than the small-particle-size starch under the strictly same determination conditions.
