摘要
提出了一种基于电子鼻的低温贮藏(277 K)草鱼品质预测方法。实验检测了草鱼样品顶空挥发气体,实验结果表明电子鼻传感器阵列对草鱼样品的响应值随着贮藏时间的增加而增加。同时实验检测了草鱼样品的菌落总数指标,电子鼻响应与微生物指标之间具有良好的对应关系。信噪比谱方法成功区分不同贮藏时间的草鱼样品。我们依据信噪比特征值建立了样品品质预测模型,该模型可以准确的预测低温贮藏草鱼样品品质,具有较好的实用价值。
A chilled-stored(277 K)grass carp quality evaluating method,based on electronic nose,has been proposed. The volatile gas in the headspace of grass carp samples is measured. The electronic nose sensor array responses to grass cap samples increase with the extension of storage time. Total viable count ( TVC ) index of the samples is also ex- amined. The corresponding relationship between electronic nose responses and the microbial growth can be established. Signal-to-noise ratio (SNR)spectrum discriminate grass carp samples in different storage time successfully. The chilled-stored grass carp quality predicting model is developed using SNR features. The developed model predicts the quality of samples with high accuracy. This method presents a good practical application value.
