摘要
综述某些蔬菜、香辛料、谷类、豆类及其制品中抗氧化物质研究的新进展。以溶剂提取得到有抗氧化效能的提取物,添加于不同基质中,测定提取物的抗氧化活性。提取物经TLC 多次分离纯化,再以GC,MS,NMR,HPLC,RI,UV等方法,鉴定了其中主要的抗氧化物质的分子结构,它们主要是类黄酮及其糖甙和酚酸类物质。
The latest development in studing the antioxidants in some vegetables,spices,cereals,beans and their products were summarized. The antioxodative activity of the extracts extracted with solvents was determined by adding the extracts into the different substrates. The molecular structures of the main antioxodants such as flavonoids,glycosides and phenolic acids purified many times with TLC were identified by the methods of GC,Ms,NMR,HPLC,RI,UV and etc.
