摘要
以乙酰丙酮为显色剂建立一种测定水发食品中甲醛含量测定的方法,研究结果表明:该方法的最佳测定条件是最大吸收波长为412 nm,显色试剂用量为3.00 mL、水浴温度为60℃、反应时间为3 min;该方法在0~1.6 mg/L内与吸光度呈良好的线性关系,其线性回归方程为:y=0.2142x-0.0069,相关系数为0.9988。摩尔吸光系数为6.43×103 L/(mol.cm),方法的检出限为0.010 mg/L。该法简便,快速,灵敏度高,可用于水发食品及其它食品中甲醛含量的测定。
Acetyl acetone as chromogenic reagent,a method of determinating the formaldehyde in water-fat foods was established.The results indicated that the best determination condition of this method was that λmax was 412 nm,the volume of chromogenic reagent was 3.00 mL,the temperature of water bath was 60 ℃,and the reaction time was 3 minute.There was a good line relationship of absorbance of the formaldehyde standard solution vs formaldehyde standard solution's concentration in the range from 0~1.6 mg/L.The linear regrssion equation was y=0.2142x-0.0069 with a correlation coefficient of R=0.9988.The molar absorptivity was 6.43×103 L/(mol·cm).The detection limit was 0.010 mg/L.The method was simple,rapid,and high sensitivity.It can be used for water-fat foods and other foods in the determination of formaldehyde content.
