摘要
以5种常见食用油(大豆油、橄榄油、花生油、葵花子油、玉米油)作为研究对象,探讨脉冲强光对食用油品质的影响。试验结果表明:经脉冲强光处理后油脂的酸价、过氧化物值和丙二醛值随闪照次数和闪照电压的增大而增大。闪照次数影响程度大于闪照电压。闪照64次时,5种食用植物油的各个指标符合食用油卫生标准。
In this paper,the effect of pulsed light on the quality of soybean oils, oliva oil, peanut oil, sunflowerseed oil and corn oil were investigated. The results showed the acidic value, peroxide value and malondialdehyde value increasedwith number of pulsed and input voltage increased. The sequence of the influencing on oil are number of pulsed and input voltage. Under the experiment condition of number of pulsed 64, the edible oils safety could be ensured.
