摘要
目的研究脉冲强光对西洋参切片表面杀菌的作用。方法对西洋参切片表面进行人工污染微生物,进行脉冲强光照射处理,测定微生物杀灭效果以及西洋参切片品质影响的情况。结果脉冲强光照射25s,可使西洋参切片表面污染大肠杆菌、枯草芽孢杆菌、黑曲霉菌降低7个数量级。脉冲强光照射60s,西洋参切片感官指标没有影响,理化指标变化率不超过0.08%。聚丙烯(PP)、聚乙烯(PE)、聚酰胺(PA)较适合作为脉冲强光杀菌包装材料。结论脉冲强光可有效杀灭西洋参切片表面污染微生物,同时对西洋参切片品质影响很小。
OBJECTIVE The effect of pulsed light killing microorganism on the surface of slices of American Ginseng was studied. METHODS Contaminated microorganism on the surface of slices of American Ginseng were treated by pulsed light, sterilization effect of pulsed light killing microorganism and influence on quality of slices of American Ginseng was tested. RESULTS The amount of Escherichia coil, Bacillus subtilis, Apsergillus Niger were reduced up to appropriate 7 log10 orders when these slices were treated with 25 seconds flash, sterilization had no influence on sensory organ quality of surface of slices of American Ginseng after 60 seconds flash of pulsed light, and the change ratio of physical chemistry quality was no more than 0.08% ~ Polypropylene(PP), polyethylene(PE), polyamide(PA) were suit for package material during pulsed light sterilizationo CONCLUSION Pulsed light could reduced bacterium quantity on surface of the slices effectively, and sterilization of pulsed light had little influence on quality of slices of American Ginseng.
