摘要
为了解决苦瓜(Momordica charantia)蜜汁饮料加工工艺中易浑浊和褐变的问题,分别采用4种澄清方法和4种褐变与沉淀控制方法对苦瓜蜜汁进行了处理。结果表明,明胶单宁澄清法进行澄清处理效果较好,PVPP吸附法可有效解决苦瓜蜜汁褐变和沉淀问题。
In order to solve the precipitation and browning problems of the balsam pear (Momordica charantia) honeydew pro- cessing technology, 4 clarifying methods and 4 browning inhibitory methods were applied and compared. The results showed that gelatin-tannin method had good clarification effect; while PVPP adsorption method could effectively inhibit the precipita- tion and browning of balsam pear honeydew.
