摘要
液熏技术以产品质量稳定、不含苯并芘(BaP)、并易于实现企业化连续生产而得到广泛应用。综述了液熏技术的优点、烟熏香味料的主要成分和作用、液熏工艺及影响因素、液熏工艺在水产品加工中的应用现状,并对液熏技术的未来发展前景进行了展望,以期为该技术的推广提供参考。
The liquid smoking technology was applied wildly because of its stabilized quality, no benzo (a)pyrene (BaP)and easy to achieve industrializat ion. In this paper, the advantage of liquid smoking,the basis and effect of somke flavourings,the liquid smoking technology and its effect factors, the application of liquid smoking technology on aquatic products were summarized and the developing prospect was proposed, so as to provide references for the promotion of the liquid smoking technology.
