广汉缠丝兔的高酸价是与兔肉的特性有关,主要在烘干过程中形成,缠丝兔的高酸价未影响到该产品的色、香、味和营养性。由于缠丝兔的酸价对人体健康未造成影响,因此建议该产品的酸价限量定在正常范围之内或取消此项指标。
The excessive acid value of Guanghanchansi rabbit was related with properties of rabbit meat, and mainly formed during drying process. But the excessive acid value had no effect on color, flavor, taste, and nutrition of product, and no harm for human health. Therefor, acid value limit should be kept in normal level or canceled
