摘要
多酚类物质是一种重要的功能性成分,以清除自由基等功效而著称,其存在于黄酒之中,加强对黄酒中多酚类物质检测方法的研究对推动黄酒产业的发展意义重大。文章介绍了多酚的结构性质、提取纯化方法,综述了近年来黄酒中多酚类物质检测方法的研究进展,包括紫外分光光度法、荧光检测法、毛细管电泳-电化学方法、高效液相色谱法等,并对检测方法的发展趋势进行了讨论和展望。
Polyphenols is one kind of functional components in rice wine. They are well known for scavenge of free radicals. Determination of polyphenols is beneficial to rice wine industry. The structural properties of polyphenols, extraction and purification methods of polyphenols in rice wine were reviewed in the paper, including the determination of polyphenols methods, such as UV spectrophotometry, fluorescence detection, capil- lary electrophoresis-electrochemical methods, high performance liquid chromatography, and so on. The trends and prospects of polyphenols detection in rice wine are further discussed.
