摘要
综述了蛋黄油的多种提取方法,对每种方法的作用原理及工艺特点进行了分析比较,得出酶法、超临界CO2萃取法、亚临界丙烷萃取法这些新的蛋黄油提取法,以其选择性好、出油率高、污染少、操作简单等特点已经逐渐取代了传统蛋黄油制法的结论,并讨论了蛋黄油在食品保健、化妆品、医药等领域的应用研究。
Extraction methods of egg yolk oil were reviewed.Function principles and technological characteristics of all methods were analyzed and compared. It made conclusions that conventional methods of egg oil had substituted gradually by some new methods( enzymatic, supercritical fluid extraction with carbon dioxide and sub- critical extraction by propane) ,because these new methods had the characteristics of better selectivity,higher oil extraction rate, less pollution and easier operation. Applications of egg yolk oil on food heath, cosmetic and medicine were discussed.
