摘要
建立利用基质辅助激光解吸电离飞行时间质谱(MALDI-TOF-MS)对食品中沙门氏菌的快速检测方法。从食品中分离出可疑沙门氏菌,利用不同培养基分离纯化,通过MALDI-TOF-MS法进行鉴定,并与其他检测方法比较。MALDI-TOF-MS对野生沙门氏菌株的鉴定结果与传统鉴定结果一致,说明本试验建立的方法对于沙门氏菌的鉴定准确性较高。MALDI-TOF-MS方法检测食品中沙门氏菌快速准确且操作简单,可发展成为食品检验沙门氏菌的重要辅助工具。
A rapid detection method for Salmonella strain in food by Matrix assisted laser desorption/ionization time of flight mass spectrometry(MALDI-TOF-MS) was established.Suspected Salmonella was isolated from food with different culture media,detected and identified by MALDI-TOF-MS.Detection and identification results of MALDI-TOF-MS of wild strains of Salmonella are consistent with the traditional identification,indicating that the method of this experiment has the identification accuracy for Salmonella.MALDI-TOF-MS method was exact,speed and easy for Salmonella detection in food and MALDI-TOF-MS can be developed for food products quarantine of Salmonella important assistant tool.
