感官分析标准中的标度技术进步 被引量:7

Progress of Scales Technology in Sensory Analysis Standards

摘要 标度本质是心理物理学中的量表,在感官分析中广泛地应用标度来反应或者测量人的感官对产品特性的感知,从而达到量化感官体验,并进一步进行统计分析的目的。本文分析研究了国际标准化组织相关标度标准的主要技术内容以及新旧版本国际标准中所隐含的标度技术的变化,以及标度技术思想的进步,提出了标度技术及其相关标准进一步研究与完善的建议。 Scales are measuring continuum in psychophysics essentially.Scales are widely used to quantify the sensory experience for statistical analysis by measuring the responses to the attribute of the products.Main technical contents in ISO scale standards were summarized in this paper.The changes of scale technology in old and new version of standards were analyzed.The ideological development of scale technology was discussed and advices to further study on the scale technology and improve the development of scale standards were provided.
