摘要
综述近年来国内外在β-葡聚糖领域的研究内容和成果,包括β-葡聚糖的分子结构和功能性、制备以及含量的测定,并对β-葡聚糖作为新型保健食品添加剂的应用进行展望。
The recent research progress on β-glucan such as the moleculer structure,physiological functions,preparation and determination of β-glucan have been reviewed,and as a new health food additive the application tendency on β-glucan has been anticipated as well.
