摘要
在啤酒工业中应用的发酵菌种为啤酒酵母,但乳酸菌作为辅助菌也同样影响着啤酒的酿造过程。本论文首先综述了乳酸菌在生物酸化技术中的应用同时也对乳酸菌对啤酒酿造的有害影响进行了综述。
As fermentation bacteria,the saccharomyces cerevisiae is used in beer industry,but as supplement bacteria,lactic acid bacteria also effects the beer brewing process.In the paper,summarizes the utilization of lactic acid bacteria in the biological acidification technique,and also summaries on that some polluted lactic acid bacteria may cause serious harm to beer fermentation.
